Eating Healthy
Providing you with healthy options is something your dining team proudly does every day. We help you select delicious, nutritious and satisfying meals, snacks and desserts by highlighting well-balanced menu choices and providing nutritional information and tips to help you make choices that fit your needs. Vegetarian dishes are offered at various locations on campus, some examples are listed on our Vegetarian page.
Mindful
Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!
Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
Vegetarian
Menu items with the vegetarian icon contain no meat, fish, poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Plant-Based
Plant-based meals only use ingredients from plants such as: fruits, vegetables, whole grains, legumes & nuts. They may also include honey and sugar.
Vegan
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
Food Allergies
We take pride in sourcing wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. We are all passionate about serving students. From general manager to front line servers, we work diligently to address students’ specific needs, especially those with food allergies, Celiac disease, or special diet needs.
Simple Servings
Our on-campus resident dining option where we provide safe and appetizing food choices for our customers with food allergies, gluten intolerance, and those who prefer simple foods. Located in Harless Dining Hall, all meals are prepared and served without the use of 8/9 of the main food allergens (milk, eggs, shellfish, tree nuts, peanuts, wheat, soy, sesame) & gluten.
Our provided menus contain statements specifically highlighting the top nine allergens (milk, eggs, shellfish, fish, tree nuts, peanuts, wheat, soy, sesame) and gluten. Guests may check on the presence of allergens prior to planning their meals using the online menu or the Everyday mobile app. The information is also posted on menu boards in the dining center.

We follow safety protocols when preparing the menu items. However, we cannot eliminate the possibility of cross-contact or declare any item free of any allergen or gluten. Please inform the Registered Dietitian or a Marshall Dining manager to accommodate individual dietary needs and decrease your risk of a reaction.
Dietary Accommodations
We strive to accommodate the full-spectrum of dietary needs and restrictions by providing daily rotating vegetarian, vegan and gluten & allergen safe options (SimpleServings & SimpleZone). If you have a dietary accommodation you feel cannot be met in the dining hall, please contact The Office of Disability Services.
